Levels Experiment Day 3

I have to say that it’s been facinating to see how what I eat turns into glucose in my body. It’s not exactly what I expected.
For example, my regular weekday breakfast has been Cheerios and blueberries. Cheerios are seemingly healthy. They’re only 100 calories per serving, no fat, 2 grams of fiber, no added sugar, and whole grain. What’s not to like?
We’ve all heard that processed foods break down easily, but it’s impressive to see it happen in almost near real-time.
Take a look at the image below. That spike is what happened after I ate my Cheerios and blueberries. My glucose shot up, and just as quickly crashed. I’ve been starting my day like this several times a week!
I think it’s pretty cool to see. And now I can use this information to make positive changes.
Now What?
There’s no way to deny what I’m eating has negative effects on my endocrine system. Besides making healthier food choices, I’ve started a habit of getting on my bike after eating and easy peddling for 10 minutes. That flattens out the curve and keeps me below the 110 mg/dL target.
We’ll try that for the rest of the week and see how that goes.
